I love the smell of banana bread cooking in the oven. It reminds me of when I was little and I would come home from school and my Mom would be baking banana bread. On days that she was baking something, it just made the day so much better.
No special ingredients except overripe bananas
This banana bread recipe is super simple and easy to make. You should have all the ingredients on hand in your kitchen. I try to keep a well stocked pantry but even if you do not have that, you can still make this and sub in some of your items you have on hand. This recipe is so easy and forgiving.
What to do with all those extra bananas?
It seems like my family either eats all the bananas I buy in one sitting or they decide they no longer like them and they all get way to ripe to eat. Sometimes, I will buy bananas and they go bad overnight it seems like. Anyway, when you are dealing with having overripe bananas this recipe will help use them up.
What to do if I don’t have overripe bananas?
If you want to make some banana bread and don’t have overripe bananas then here is a quick tip to get them to ripen faster. Get a brown paper lunch bag and put your bananas in the bag. You can roll the top down and close them inside. They will quickly in the next few days ripen inside the bag. Check on them daily and when they are ripe you can bake your bread.
Another great tip….
If you end up with only one banana and you don’t want to make bread you can just throw the whole banana….peel and all in your freezer until you are ready to use it. If you don’t have enough bananas and want to make bread you can use your one banana and add in some applesauce to equal the amount the extra banana would make.

Banana bread recipe that is simple and quick and helps you use up all those over-ripe bananas.
Ingredients
- 6 large bananas
- 1 1/2 cup sugar
- 1 1/2 cup butter (melted)
- 4 eggs
- 4 tsp. vanilla extract
- 4 cups flour
- 2 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. salt
Instructions
1. Preheat oven to 325 degrees. Grease 3 loaf pans.
2. In a large bowl mash bananas. Then add in the sugar and butter. Mix well. Then add in the eggs and vanilla.
3. Mix in the flour, baking soda, baking powder, and salt. Mix well.
4. Divide batter between the 3 loaf pans.
5. Bake at 325 degrees for 50 - 60 minutes.
Notes
You can make this recipe quickly and get it in the oven for now, but it is much better if you wait a day to eat it. Our family loves to eat it with butter on top. It is also great grilled in a pan with some butter.
